23 cloves of garlic
1 small onion (optional)

- Heat the olive oil in a large pan or pot, and fry the onion gently for 4-5 minutes until it starts to go translucent.
- Add in the garlic (peeled and minced) and cook until fragrant, around 1 minute.
- Add in the broccoli and cauliflower and sauté for 3-4 minutes, stirring.
- Prepare and add stock and bring to a boil. Stir for a minute, then cover, reduce the heat, and simmer until vegetables are tender, 10 to 20 minutes. Remove from the heat.
- Purée soup with an immersion blender until smooth. Stir in thickened cream. Taste and season with salt and black pepper to achieve the desired flavour.
- Pair soup with roast chicken and enjoy! Don't forget to break up our keto crackers as croutons on top.
