Yields12 Servings
 1 cup almond meal
 2 tbsp coconut flour
 2 tsp baking powder
 ½ tsp salt
 1 tsp garlic powder
 2 eggs
 50 g melted butter
 80 g spinach, chopped
 20 g spring onions
 100 g feta cheese, chopped
 100 g Keep Keto Roasted Capsicum and Chilli Relish
 50 g parmesan cheese

Pre-heat fan forced oven to 160C/320F.

In a large mixing bowl combine all the dry ingredients: almond meal, coconut flour, baking powder, salt and garlic powder.

In a separate bowl, combine eggs and melted butter.

Add to the dry mix and stir with a spatula until just combined.

Fold through the parmesan cheese, spinach, spring onions, feta cheese, followed by the relish.

Pour mixture into greased or lined 12 hole muffin pan.

Bake for 30 minutes or until slightly brown.

Cool slightly in the tin.

Serve warm or cold.
